Chicken & Brown Rice Pasta...
She is back! The fantastic Michal is here again to give us some help in the kitchen. Take it away, girlfriend!
This is a super easy recipe. If you prepare ahead, it can be made on a time-crunch. I make this anytime I have left over chicken. Don't let it deter you if you don't have any handy, you can cook the chicken on the spot as well. Hope you enjoy!
Ingredients:
Remaining Chicken from THIS RECIPE ( approximately 1.5 lbs.)
5 Strips Bacon
1/2 Bag/Box Brown Rice Pasta
4 Tbl. Extra Virgin Olive Oil
2-3 Bell Peppers (red, yellow or orange) Seeded & Thinly Sliced
1 Small Onion Thinly Sliced
1/2 Tbl. Minced Garlic
1/2 Bag Fresh Spinach
1 Tsp. Salt
1/2 Tsp. Red Pepper Flakes
1/2 Tsp. Black Pepper
Juice of 1 Lemon
Directions:
Cook pasta according to package instructions. Cook bacon; once cooked, remove from heat, let bacon cool, chop & set aside. Heat 1 Tbl. EVOO in bacon renderings. Add bell peppers, onions, garlic & red pepper flakes to oil until tender. Add cooked chicken. (If making this with uncooked chicken: Cook chicken with onions & garlic. Set aside & cook bacon. Set aside bacon with cooked chicken & proceed with recipe.) Add salt & pepper. Place cooked pasta in large bowl, add spinach, lemon juice, chopped bacon, chicken & peppers. Mix well & serve.

Pattern Mixing...

Pattern Mixing is not always easy. To be honest, it can be downright difficult. The key is to make sure that the colors complement each other, and the patterns flow well together. Do you mix patterns? What are your favorite tips on mixing patterns?
